La Locanda’s Guide to Sourcing Authentic Tomatoes

A white textured plate with a green rectangular strip, Burrata Semifreddo with tomato coulis in the centre, and small green dots arranged in a semi-circle, all on a wooden table.

La Locanda was delighted to contribute to the latest edition of PAPA magazine, sharing our perspective on one of the most iconic ingredients in Italian cuisine – the tomato.

For Italians, the tomato is far more than a simple ingredient. It represents tradition, seasonality and the philosophy that exceptional dishes begin with exceptional produce. From fresh summer salads to slow-cooked ragù and authentic pizza, choosing the right variety for the right purpose is fundamental to preserving the true character of Italian cooking.

In the feature, Agrichef Maurizio Bocchi discusses the importance of sourcing, sustainability and the growing appreciation for premium tomato varieties in the UK. He also highlights the changing landscape of the food industry, where consumers increasingly value authenticity, traceability and natural ingredients.

At La Locanda, we believe that great Italian cuisine is built on respect for the raw materials. Whenever possible, we source fresh produce locally whilst continuing to rely on carefully selected Italian tomato products that deliver the flavour and quality demanded by traditional recipes. This balance between local partnerships and authentic Italian ingredients reflects our commitment to sustainable and responsible gastronomy.

We are grateful to PAPA magazine for the opportunity to share our passion for one of Italy’s most celebrated ingredients and our vision for the future of authentic Italian cooking.
